    If the ribs came from a hog you've killed and you don't cook them to fall from the bone then you're asking for trouble! You can throw Bear meat into that statement too! I'll tell you a little secret though they both are some fine eating!

    sounds great. i made a much smaller batch

    i used 2 yolks

    a couple of tablespoons of lemon juice and one tablespoon apple cider vinegar

    about a cup of oil, which i dribbled in as i whisked

    some salt, pepper, garlic powder, paprika and cayenne powder

    tastes outstanding, but not quite as thick as i want, though i guess it will never be the consistency of the stuff out of a jar. should i have used the whites too or more oil?

    im sure i just violated the "recipe swapping" rule :pointlol:

    A ribeye is just as tender, has more flavor, and is a real man's steak! Steaks are my specialty. And when I say specialty I don't mean I get a steak put a store bought rub on it and grill it.

    I've spent way too many hours researching and testing and refining my steak the past oh ... 6 years or so. and I'm still testing and still refining. I've studied the science behind certain techniques, dos and don'ts. Even dry aged two USDA prime rib roasts (prime rib0, in my mom's cooler at her 7 Eleven and then cut them into ribeyes and had a big steak feast. I could have went longer but I was pressed for time.

    Sorry for derailing the thread but gafinfan, go ahead, order the ribeye. It's just as tender as filet mignon, probably cheaper and better in every way, except fat content, which filet is leaner. that's a good or bad thing depending on how you look at it.. Trust me. And it'll taste way better. There's a reason they wrap filet mignon in bacon sometimes, there's no flavor!!!!!!

    Ok, rule #57. Learn to cook a damn steak properly.

    No violation on the recipe swapping rule, we're having a manly discussion about the appropriate tools for the job.

    Use a blender or a food processor rather than a whisk. Unless you're a world champion masturbator it's faster and you'll get it to thicken up no problems.

    Whole eggs give a lighter taste, and tends to pour easier.

    Rule 57: Thou shalt only use cast iron or blue steel pans, skillets and dutch ovens.
    Rule 58: Thou shalt only use copper pans, although a stainless steel stockpot is acceptable if you are making serious amounts of stock or pasta.
    Rule 59: Teflon is thine enemy.
    Rule 60: Carbon steel knives are the bomb.

    Damn, thats some kind of beautiful, a tip o the brim sir!!! My Dad, God rest his soul, would have taken you under his wing for the way you've handled that cut. Everything I know I learned from him starting by sitting on a bar stool at age 4 or so watching him butcher a half a side, the man was a genusat what he did!

    Your right but they are also the ones coming from old milk cows! NEVER buy a bacon wrapped Filet!!!!!!

    Your dad sounds like he was a man's man! I am not on a butcher half a side level yet. At all. Everything I learned was on TV and internet :) Would have been cool to have watched and learned something like that from pops.

    My next venture is a whole weaner/suckling pig on the rotiss. One day I'll attempt to butcher a side of cow.

    Hey, I hear ya, and I agree with you guys...If I'm anywhere and I see a guy drinking any frozen drink, I automatically assume he has a poodle for a pet. However, there's something about Holiday Isle that makes it appropriate and acceptable to drink a Pina Colada with a 151 floater. Not 2 or 3, but 1 Pina Colada.

    If so i have 2

    1) Baking for a woman is NOT UNMANLY and may lead to sexual relations!

    2) Meatballs must always be homemade as well as the sauce they steep in!

    Miller and Miller Lite and Coors lite are never acceptable for drinking under any circumstance

    Budweiser is acceptable (and mandatory) when fishing, bowling or sitting on the beach.

    And while driving home from work. I love having a 'roadie' and living in the country allows me indulge in one nightly on the drive home. Get the 16 oz bowling pin Budweiser bottle it lasts till I hit the front door.

    Yeah, but given the choice between 4 good quality beers and 8-10 Budweisers, I'll take the former. about the same amount of alcohol and better tasting.

    You're right. that's why I try to have friends who drink good beer but not a lot, mixed in with my friends who drink budweiser and drink a lot. My price isn't quite that good. But I get the Bud 36 packs for 19-20 bucks at Costco. still pretty decent.

    I've hosted more than 30. We may be beer snobs, but around here, I'd get crucified for buying mass market domestics. My dad drinks coors light for himself. Buys heineken when people come over (which is often). I think Heineken tastes like piss though, even though I've never tasted piss.

    Everybody in my group, brings beer though, so you only need enough to get started. And no, we don't ask anyone bring beer. It's just something we do. If I go somewhere I know we'll be drinking, I buy a 12 packer just because. all my buddies do the same, even if I have beer. Sometimes the parties get to 40-60 people. And unless the party goes on all night, there's always leftover beer. I'll have 3 friends over for a little bbq, and they'll bring 36 beers lol. More for me for the week! :pointlol:

    If it's truly an epic party, we'll keg it. 130 bucks or so for a keg of blue moon, stella, maybe local brew like alesmith or ballast point.

    Not to totally sidetrack this thread, but I gotta agree with OF on this one. You can have your lite beers, I'll stick with my Bud. Although, I have to admit...I've been drinking Bud Ice for a while now. Seems it doesn't see very well locally, so I've been scoring on 30 packs for like $16 and change. Seems pretty reasonable. And, it's got 5.5% alcohol per volume.

    Back on topic, I'll only add to what has already been said:

    When eating spare/baby back ribs, meat that falls off the bone means they're done son. Not overdone.

    When eating beef, well done is overdone.

    I cook on a grill (gas, not charcoal or wood). I know it ain't as good as the other, but I'm outside, I got a cold one (or three or four) going down, it's meat on a grill with fire cooking it. That's good 'nough for me.

    I cook. I eat. Wife cleans up. If she's lucky, I take care of her later.

    falling off the bone is fine. But when ALL the meat falls off the bone and NO meat clings to the bone...the ribs are overdone.
